Tried the Sweet Potato Latkes last night. I think my kitchen’s “coarse grind” is coarser and longer than the one that made the pancakes in the article. I found I had to wait to flip the latkes on a higher light, until the first side was almost black, otherwise they wouldn’t stay together. That took me a couple of batches (about a half-dozen latkes) to learn. Otherwise, they were a big hit!
