This is a lovely article. A few details, please: When is the salt added? The poor, sweet bird’s head drooped. What should be done to correct this? Is it a matter of placing the head and neck closer to the center of the body?
More on the recipe – Is the oil for the top of the dough before allowing the first rise a 5th tablespoon, or is it separated from the total listed in ingredients, with 3 T mixed into the dough and the 4th on the top for the rise?

A coating of oil for the dough so that it doesn’t stick to the bowl. You can even spritz PAM. Good luck!
